BBQ recipesBBQ recipes are among the favorite recipes for many people. Although these meals can be delicious, you need to first be able to get off on the right foot by choosing the right kind of meat.

It is true that the right meat can either make or break your final product. In order to make the best choice, you should make a visit to your local meat counter or butcher and ask for the best cuts of meat. With the best meat, you will be able to get results that are greater than you've never had.

If you truly want the nicest meat, you should go to a butcher or meat market. Frozen meat is not what is best for you. Some of the larger grocery stores have butchers, but you certainly don't want to shop in a store where nearly everything is prepackaged or frozen.

You should be able to talk to the butcher about the meat and get some good advice. You most likely will want young meat, since older animals more often produce meat that is tougher to eat.

Also you should ask about the aging process. Meat actually can be stored at a rather low temperature for a while. This actually will help break down the tissues and creates tender meat.

All meat comes in many different grades. But, if you truly want the best meat, you should buy prime the highest quality prime grade meat. Even though this meat is usually going to be more expensive than other kinds, it is worth it.

The best thing about it is it has a lot of marbling and it will be great on a grill. This top grade is usually found only in places like high-class meat markets. Choice grade would be the second best option, and it is sometimes found in typical grocery stores.

There are three main things that you will want to look for in order to have delicious meat.

First, the meat should be fresh and never have been frozen. When looking at them before buying, make sure that it's still brightly colored and that there are no extra juices in the package.

Secondly, good meat needs to have a decent layer of fat on it. That’s because a good deal of marbling helps the meat to be able to stay tender because it keeps the juices from escaping and it adds to the taste. If you want to reduce fat, the best option is to trim the meat after it cooks instead of before.

Third, it also needs to have a thickness that is even. Meat that tends to be thicker in one section than the other is hard to cook evenly. What will happen is that the meat will be either overcooked or undercooked.

When grilling beef, the cuts that make the best meat are usually the portions that are the most tender. You should look for rib eye or porterhouse steaks. You also can buy as the classic t-bone as well as strip steaks. Meat that is cut from the tenderloin, such as filet mignon, is often going to be more tender, but it will also be more expensive.

If you are looking to make a great BBQ recipe, you should avoid skirt steaks and flank steaks. These cuts don't make good choices as far as taste is concerned since they have little marbling and are often pretty thin. If you do decide to use them, you should make sure to marinate them well and also be careful not to overcook them.

You can buy any of your meat a few days before you plan to use it, but don’t buy it too early. Storing it in the fridge for a couple of days can actually help to age it and also make it more tender after it is cooked.
